What happened to the concept of aging wines? She mentions that organic wines can age as well as any (duh?) and then says that all of her "$500" picks are to be drunk now. I thought this was for a "cellar," not a "closet." Also, less critically, most well-made wines benefit from a year or two of repose before drinking.
